Oatmeal with white chocolate and raspberries

This oatmeal is easy to make and tastes like heaven. You only need 5 simple ingredients (6 if adding hazelnuts) and about 6-7min to make.

Why I love oats:

Oats are one of my healthy breakfast favorites. Quick and easy to make. Super healthy. And, you can customize them however you like.

Oats have good amount of fiber. They also contain important vitamins and minerals such as magnesium, zinc, and iron, which help increase energy and boost immunity. And also they are packed with protein.

The best part ? Oats are naturally gluten free. But you have to be careful sometimes they are processed in a facility that also handle wheat products. If you are gluten free, make sure to buy certified gluten free oats.

Ingredients for this oatmeal:

Oats – I used rolled oats. I love them because they only need about 5 minutes to cook.  Also, I can grind them in a blender and make oat flour for my other recipes. You can also use quick cooking oats or old fashioned oats for this recipe.

Almond milk – I like it for its creamy texture and nutty flavor. You can use any milk you like (cow milk, cashew milk, coconut milk, hemp milk, etc).

Agave syrup – This naturally low glycemic sweetener is harvested from the core of the Agave plant. Of course, you can use any sweetener that satisfies your sweet tooth (honey, maple syrup, coconut nectar or date syrup)

White chocolate – I love white chocolate especially when it’s paired with fresh fruit like raspberries, strawberries or blueberries.

Raspberries – Their tartness contrasts the sweetness of white chocolate.  A marriage made in health heaven. They are also considered a super-food and full of antioxidants.

Hazelnuts – Add crunchiness to this oatmeal. They are packed with good fats. If you don’t like hazelnuts, simply substitute them with your favorite nuts (almonds, walnuts, Brazil nuts, cashews, etc).

How to make this oatmeal:

Mix oats, milk, and sweetener. Boil on low for about 5 minutes. In the meantime in another pot, cook raspberries with sweetener slowly mashing them with a fork and breaking them into a jam. About 5 minutes.

Chop your white chocolate and microwave it for about 30 seconds then add a tablespoon of milk and stir. 

When your oats and raspberry jam are cooked, pour the jam over the oatmeal, and add the melted chocolate.  Top with chopped hazelnuts.

Ingredients

  • 1/2 cup GF rolled oats

  • 1 cup + 1TBSP almond milk*

  • 1 tsp + 1 tsp agave*

  • 1/2 cup raspberries

  • 1/4 cup white chocolate (chopped)

  • Optional chopped hazelnuts

Directions

  • In a small pot, mix oats, one cup of almond milk, and 1 tsp agave.
  • In another pot simmer raspberries with 1 tsp of agave. Mash raspberries in to jam. Simmer for about 5 minutes.
  • Meanwhile chop white chocolate and microwave it for about 30 seconds. Stir it and add 1 TBSP of almond milk.
  • When everything is ready, put a layer of raspberry jam over the oats and add melted chocolate.
  • Optional: add some chopped hazelnuts 

Notes

  • I used almond milk you can use any milk you like.
  • Agave was my sweetener of choice fell free to use any sweetener you like.
